This is a Mexican inspired stir-fry. It could be served with rice, or in tacos. You might have noticed the repeated combination of courgette and pepper in my recipes. I find them really versatile, healthy and they are low-FODMAP.
This recipe also does not contain onion and makes use of garlic oil. The FODMAPS in garlic are soluble in water but not in oil, so you can use the infused oil. If you want to spice it up a bit then add some chopped red chilli.
